    "description" : "Σκοπός της παρούσας πτυχιακής εργασίας είναι η θεωρητική και εμπειρική διερεύνηση των φυσικοχημικών χαρακτηριστικών του πρόβειου γάλακτος και του παραγώγου αυτού, του τυριού.\nΣτο πρώτο μέρος της εργασίας παρουσιάζονται και αναλύονται μελέτες που έχουν πραγματοποιηθεί σχετικά με τα φυσικοχημικά χαρακτηριστικά του πρόβειου γάλακτος και του τυριού και εξάγεται το συμπέρασμα ότι οι περισσότερες μελέτες συμφωνούσαν μεταξύ τους ως προς τα εξαγόμενα αποτελέσματα. Επίσης, μελετώνται σε θεωρητικό επίπεδο τα οφέλη και οι αλλεργίες που ενδέχεται να προκύψουν από την κατανάλωση πρόβειου γάλακτος και τυριού. Τόσο το πρόβειο γάλα όσο και το τυρί είναι τροφές με υψηλή διατροφική αξία και ως εκ τούτου η κατανάλωσή τους έχει σημαντικά και πολύ- επίπεδα οφέλη στην υγεία του ανθρώπου. Αντίθετα, οι αλλεργίες που ενδέχεται να προκαλέσουν δεν είναι σοβαρές, ενώ σε πολλές περιπτώσεις υποχωρούν μετά από ένα ορισμένο χρονικό διάστημα.\nΣτο δεύτερο μέρος της εργασίας περιγράφονται οι μέθοδοι ανάλυσης των φυσικοχημικών χαρακτηριστικών του πρόβειου γάλακτος. H πειραματική διαδικασία πραγματοποιήθηκε στο Εργαστήριο Χημείας, του τμήματος Τεχνολόγων Γεωπόνων του Πανεπιστημίου Δυτικής Μακεδονίας, Παράρτημα Φλώρινας.\nΣτο τρίτο μέρος παρουσιάζονται τα αποτελέσματα και γίνεται η ανάλυση τους σε δύο άξονες: αρχικά συγκρίνονται με τα αντίστοιχα ευρήματα άλλων μελετών και κατόπιν συγκρίνονται με τα αποτελέσματα μελετών που αφορούν τα φυσικοχημικά χαρακτηριστικά του κατσικίσιου γάλακτος.\nΗ εργασία καταλήγει στο συμπέρασμα ότι το πρόβειο γάλα και το πρόβειο τυρί έχουν παρόμοιες τιμές όσον αφορά στα φυσικοχημικά τους χαρακτηριστικά, γεγονός που σημαίνει ότι οι ιδιότητες του γάλακτος μεταφέρονται στο τυρί, κατά τη διαδικασία της παρασκευής. Αντίθετα, οι τιμές στο πρόβειο και το κατσικίσιο γάλα παρουσιάζουν σημαντικές διαφορές μεταξύ τους.",
