    "description" : "Στην παρούσα πτυχιακή εργασία μελετήθηκαν ορισμένα φυσικοχημικά χαρακτηριστικά (pH άλμης και σάρκας, τιτλοδοτούμενη οξύτητα άλμης, προσδιορισμός αλατιού στην άλμη και στη σάρκα, προσδιορισμός ολικών πολυφαινολών στον καρπό) και έγινε προσδιορισμός κάποιων συστατικών (περιεκτικότητα σε υγρασία στη σάρκα, περιεκτικότητα σε τέφρα, περιεκτικότητα σε πρωτεΐνες) σε δείγματα επιτραπέζιας ελιάς από 2 περιοχές της Βόρειας Ελλάδας με παράδοση στην παραγωγή επιτραπέζιας ελιάς, την Χαλκιδική και την Άρτα.\nΣτο πρώτο μέρος της εργασίας παρουσιάζονται τα βοτανικά χαρακτηριστικά και η χημική σύσταση του ελαιόκαρπου καθώς μαζί με τον τρόπο και οι μέθοδοι την επεξεργασίας της επιτραπέζιας ελιάς, των ποικιλιών που χρησιμοποιήσαμε στην παρούσα μελέτη. Ακόμα αναφέρονται οι ελληνικές ποικιλίες της επιτραπέζιας ελιάς αλλά και η βιολογική και διατροφική τους αξία της επιτραπέζιας ελιάς. Τέλος, δίνονται οι αναλύσεις που πραγματοποιούνται στις επιτραπέζιες ελιές, οι φυσικοχημικές και μικροβιολογικές αναλύσεις και η οργανοληπτική αξιολόγηση.\nΑκολουθεί το δεύτερο μέρος οπού είναι η εργαστηριακή έρευνα που πραγματοποιήθηκε στο Ερευνητικό εργαστήριο του τμήματος Γεωπονίας της Σχολής Γεωπονικών Επιστημών του Πανεπιστήμιου Δυτικής Μακεδονίας κάνοντας χρήση του υπάρχοντος εξοπλισμού. Κατά την διάρκεια της έρευνας εξετάστηκαν συνολικά 12 δείγματα ελιάς, τα 6 ανήκαν σε ποικιλίες της Άρτας και τα άλλα 6 στην ποικιλία Χαλκιδικής, περιόδου συλλογής 2016-2017.",
