Το χρώμα εξαρτάται από τη σύστασή του σε πολυφαινόλες, από τη ποικιλία, την ωρίμανση, τον τρόπο οινοποίησης και συντήρησης. (Σουφλερός, 1982)\nΗ πείρα έχει δείξει ότι υπάρχει σχέση μεταξύ έντασης του χρώματος και αρώματος των κρασιών. Χρώμα άτονο βεβαιώνει την ύπαρξη πτητικών αρωμάτων, φρούτων, λουλουδιών. Χρώμα έντονο φανερώνει πυκνό και έντονο άρωμα. Χρώμα σκοτεινό δείχνει αρώματα ξηρών φρούτων, καβουρδίσματος, μπαχαρικών. (Δαμηλάκος, 1988)\nΟι ζωηρές χροιές είναι σημάδι γευστικής φρεσκάδας και υψηλής οξύτητας, ενώ αντίθετα οι άτονες χροιές φανερώνουν μια πλαδαρότητα γεύσης. Το χρώμα είναι πολύτιμος οδηγός για τον προσδιορισμό της ηλικίας των κρασιών. Τέλος, η ελκυστικότητα του χρώματος ενός άσπρου κρασιού είναι ένδειξη της γευστικής και αρωματικής του ποιότητας. (Δαμηλάκος, 1988)\nΗ παρατήρηση του χρώματος και της ακριβούς χροιάς του κρασιού γίνεται τοποθετώντας το σε ένα ποτήρι, που το κρατάμε γυρτό μπροστά σε μια λευκή επιφάνεια. Καθαρός και δυνατός φωτισμός είναι απαραίτητος. (Τσακίρης, 1998)",
