Επιπλέον παρουσιάζονται και οι παράγοντες που αλλοιώνουν την σύσταση του βουτύρου.\nΣτο πρώτο κεφάλαιο γίνεται μία ιστορική αναδρομή του βουτύρου, που βρίσκει τις ρίζες της μέχρι το 10.000 π.χ., στο δεύτερο κεφάλαιο καταγράφονται οι πρώτες ύλες του βουτύρου, στην συνέχεια στο τρίτο κεφάλαιο γίνεται αναφορά στην μεταποίηση του βουτύρου ενώ στο τέταρτο κεφάλαιο καταγράφονται τα οργανοληπτικά χαρακτηριστικά και οι προδιαγραφές που πρέπει να έχουν. Στο πέμπτο κεφάλαιο αναφέρονται τα μικροβιολογικά χαρακτηριστικά του βουτύρου, στο πέμπτο κεφάλαιο αναφέρονται τα φυσικοχημικά χαρακτηριστικά του βουτύρου. Τέλος αναφέρονται οι αλλοιώσεις του βουτύρου.",
