    "description" : "Στην παρούσα εργασία περιγράφεται η παραγωγική διαδικασία της κατάψυξης δύο λαχανικών, του σπανακιού και του λαχανοκομικού μπιζελιού, όπως πραγματοποιούνται στη Βιομηχανία κατεψυγμένων λαχανικών και φρούτων «ΑΛΤΕΡΡΑ Α.Ε.», η οποία εδρεύει στο Ν. Πέλλης.\nΑρχικά παρατίθενται στοιχεία αναφορικά με τη βιολογία και την καλλιέργεια των δύο φυτικών ειδών και στη συνέχεια, γίνεται εκτενής αναφορά στη μέθοδο της ταχείας κατάψυξης που εφαρμόζεται για την παραγωγή των παραπάνω προϊόντων. Η ταχεία κατάψυξη, εφόσον πραγματοποιηθεί με τον ενδεδειγμένο τρόπο, επιφέρει ελάχιστες μεταβολές στα οργανοληπτικά χαρακτηριστικά και τη θρεπτική αξία των τροφίμων, με αποτέλεσμα την παραγωγή κατεψυγμένων προϊόντων υψηλής ποιότητας.",
