Το ελαιόλαδο είναι ένα βασικό γεωργικό προϊόν και παίζει σημαντικό ρόλο στην αγρονομία και οικονομία κάθε χώρας που ασχολείται με την παραγωγή του.Σήμερα, είναι ευρέως γνωστό ότι η τακτική κατανάλωση ελαιόλαδουεμφανίζει οφέλη για την υγεία που σχετίζονται με τη μεσογειακή διατροφή. Η θρεπτική αξία του ελαιόλαδου προκύπτει από το υψηλό επίπεδο ελαϊκού οξέος και από δευτερεύοντα συστατικά όπως φυτοστερόλες, καροτενοειδή, τοκοφερόλες και ολικές φαινόλες. Οι κύριες φαινολικές ενώσεις είναι παράγωγα της ελαιοροπίνης, με βάση την υδροξυτυροσόλη, τα οποία είναι ισχυρά αντιοξειδωτικά για τον ανθρώπινο οργανισμό. Λαμβάνοντας υπόψη ότι το ελαιόλαδο προέρχεται από τον καρπό της ελιάς μόνο με μηχανικά και φυσικά μέσα, διατηρεί περισσότερα φυτοχημικά ευεργετικά για την υγεία του ανθρώπου σε σύγκριση με άλλα εμπορικά διαθέσιμα εξευγενισμένα φυτικά έλαια, τα οποία γενικά εκχυλίζονται μέσω διαλυτών. Μεταξύ των συστατικών του ελαιόλαδου, οι τοκοφερόλες και οι φαινολικές ενώσεις αντιπροσωπεύουν τα αντιοξειδωτικά του στοιχεία. Συγκεκριμένα, οι φαινολικές ενώσεις συμβάλλουν σημαντικά στις θρεπτικές ιδιότητες, τα αισθητηριακά χαρακτηριστικά και τη διάρκεια ζωής του ελαιόλαδου. Πράγματι, είναι γνωστό ότι οι υγιείς ιδιότητες των φαινολικών ενώσεων συσχετίζονται με την αντιοξειδωτική τους δράση. Τέλος, το ελαιόλαδο όμως μπορεί να έρθει σε ανάμειξη με αποξηραμένα φρούτα όπου μπορεί να δώσει ποιοτικότερα χαρακτηριστικά στο τελικό προϊόν και να παρέχει πολλαπλά οφέλη στον οργανισμό του καταναλωτή.",
