    "description" : "Στην παρούσα μελέτη με θέμα ΄΄Διαγράμματα ροής παρασκευής ερυθρού οίνου΄΄,στόχος είναι να γίνει μια βιβλιογραφική επισκόπηση όλων των μεθόδων που χρησιμοποιούνται σήμερα. Αρχικά, θα γίνει η εξέταση όλων των τεχνικών που υπήρχαν\nκατά της διάρκεια της ιστορίας, με έμφαση στις τεχνικές του σήμερα και την αποτύπωση τους σε διαγράμματα ροής με γνώμονα τα στάδια τους. Με αυτό τον τρόπο θα γίνουν αντιληπτές οι μεταξύ τους διαφορές και κατανοητές οι θετικές/αρνητικές\nεπιδράσεις τους στον οίνο. Στο πρώτο κεφάλαιο θα γίνει μια σύντομη αναδρομή στο παρελθόν αναφέροντας τα πιο ενδιαφέροντα ιστορικά στοιχεία και ακολούθως θα\nεντοπιστούν στατιστικά στοιχεία που αντικατοπτρίζουν την σημερινή κατάσταση στην αγορά του κρασιού. Στο κεφάλαιο 2 και 3 θα δοθεί έμφαση σε μια πληθώρα στοιχείων που αφορούν τη χημική σύσταση του σταφυλιού και του οίνου. Με αυτό τον τρόπο θα υπάρξουν οι βάσεις για την καλύτερη κριτική ικανότητα του αναγνώστη στην μελέτη των επόμενων κεφαλαίων. Κατόπιν, αφού δοθούν διάφοροι ορισμοί σχετικά με τις\nκατηγορίες και τους τύπους των κρασιών, θα επισημανθούν οι κυριότερες Ελληνικές ποικιλίες ανώτερης ποιότητας και ορισμένες διεθνείς ποικιλίες παγκόσμιας εμβέλειας.\nΣτο κεφάλαιο 5 θα γίνει μια εκτενής αναφορά που θα περιλαμβάνει την κλασική μέθοδο ερυθρής οινοποίησης. Πολλά από τα στάδια της, δίνουν βάση στην διασφάλιση\nτης ποιότητας του οίνου. Αργότερα, σύμφωνα με την ενδελεχή έρευνα που θα έχει προηγηθεί για τις νέες μεθόδους, θα τονιστούν οι βασικότερες πληροφορίες και οι πιο\nαξιόλογες διαφορές που τις καθιστούν μοναδικές. Στη συνέχεια, θα αναφερθούν ορισμένες διεργασίες που πραγματοποιούνται στον οίνο μετά την τελεσφόρηση των\nκυριότερων σταδίων. Η επιτυχής τέλεση τους θα καθορίσει σε μεγάλο βαθμό τα οργανοληπτικά χαρακτηριστικά του τελικού προϊόντος. Επιπροσθέτως, στο κεφάλαιο 8 θα τονιστεί η σημασία της διαχείρισης των αποβλήτων ενός οινοποιείου, μιας\nδιαδικασίας που στην σύγχρονη εποχή οι βιομηχανίες έχουν παραμελήσει με αποτέλεσμα την όξυνση των περιβαλλοντικών προβλημάτων. Στο τελευταίο κεφάλαιο της εργασίας, θα καταστεί σαφές πόσο σημαντικό είναι να καταναλώνεται με τον\nκατάλληλο τρόπο το κρασί, έτσι ώστε να είναι αρωγός σε πολλά ζητήματα υγείας.",
