    "description" : "Στόχος της συγκεκριμένης πτυχιακής εργασίας ήταν ο τεχνολογικός και ποιοτικός έλεγχος στα φυτικά έλαια. Τα φυτικά έλαια που μελετήθηκαν ήταν το σογιέλαιο, το σησαμέλαιο, το αραβοσιτέλαιο και το ηλιέλαιο. Οι αναλύσεις που πραγματοποιήθηκαν αφορούσαν στη μέτρηση της % οξύτητας, του αριθμού υπεροξειδίων, την εύρεση των συντελεστών Κ232, Κ270 και ΔΚ, καθώς και τον έλεγχο Rancimat. \nΓια την διεξαγωγή των πειραματικών διεργασιών χρησιμοποιήθηκαν τέσσερα (4) δείγματα φυτικών ελαίων από γνωστές εταιρίες του εμπορίου: σογιέλαιο, ηλιέλαιο, αραβοσιτέλαιο και σησαμέλαιο. Το σογιέλαιο, το ηλιέλαιο και το αραβοσιτέλαιο ήταν της εταιρίας Μαράτα και παραγωγής 2020, ενώ το σησαμέλαιο της εταιρίας Αφοί Χαΐτογλου, παραγωγής 2020, επίσης.\nΤα δείγματα δεν κατεργάστηκαν με τον οποιοδήποτε τρόπο πριν τον έλεγχό τους, αλλά ελέγχθηκαν ατόφια. Η μόνη θερμική κατεργασία που έλαβε χώρα, ήταν στον έλεγχο Rancimat, στους 60 οC,  80 οC και 130 οC. Θεωρούμε ότι οι 130 οC, αντιπροσωπεύουν τη θερμοκρασία μαγειρέματος και τηγανίσματος.",
