    "description" : "Οι ενώσεις που προέρχονται από φυτά, παρέχουν αντιφλεγμονώδη και αντιοξειδωτικά μόρια τέτοια, που μπορούν να αντιμετωπίσουν το οξειδωτικό stress και τις φλεγμονές που προκαλούνται από αυτό. Το οξειδωτικό stress είναι υπεύθυνο για πλήθος χρόνιων ασθενειών, ενώ τα αντιφλεγμονώδη φάρμακα έχουν πλήθος παρενεργειών για τον ανθρώπινο οργανισμό.\nΑυξανόμενο ενδιαφέρον τον τελευταίο καιρό, έχουν παρουσιάσει οι πολυφαινόλες από το εξαιρετικό παρθένο ελαιόλαδο, το οποίο αποτελεί αναπόσπαστο κομμάτι της μεσογειακής διατροφής. Πλήθος μελετών έχουν δείξει τα ισχυρά θεραπευτικά αποτελέσματα από τα συγκεκριμένα βιοδραστικά μόρια έναντι μίας σειράς χρόνιων ασθενειών. Ανάμεσα στις συγκεκριμένες ασθένειες, συμπεριλαμβάνονται οι καρδιαγγειακές παθήσεις, ο σακχαρώδης διαβήτης, οι νευροεκφυλιστικές διαταραχές και ο καρκίνος.\nΗ εκάστοτε ποικιλία ελιάς έχει συγκεκριμένες ιδιότητες ενώ οι πολυφαινόλες κυμαίνονται από ποικιλία σε ποικιλία. Το εξαιρετικά παρθένο ελαιόλαδο είναι πλούσιο σε πολυφαινόλες και έχει ιδιαίτερα ισχυρή αντιοξειδωτική δράση, ενώ και το ελαιόλαδο παρουσιάζει σημαντικά στοιχεία αλλά όχι σε τόσο ισχυρή ένταση όπως στην περίπτωση του εξαιρετικά παρθένου ελαιόλαδου. Εκτός από την ποικιλία της ελιάς, ιδιαίτερα σημαντικοί είναι και άλλοι παράγοντες, οι οποίοι περιγράφονται και αναλύονται μέσα από την παρούσα πτυχιακή εργασία.\nΣε όλες τις περιπτώσεις, είναι αναγκαία η περαιτέρω διερεύνηση του ζητήματος σε κάθε ελληνική ποικιλία ελιάς ξεχωριστά, ενώ μία τέτοια διερεύνηση μπορεί να οδηγήσει σε περισσότερα συμπεράσματα σε ότι αφορά την ευεργετική δράση της ελιάς στον άνθρωπο.",
