Με την πρωτοποριακή μελέτη του Pasteur διασαφηνίζονται οι τεχνικές συντήρησης. Οι σύγχρονες μέθοδοι συντήρησης αποσκοπούν στην ασφάλεια των τροφίμων και\nστην διατήρηση των συστατικών και χαρακτηριστικών τους στην φυσική τους κατάσταση. Η μεταβολή των φυσικών και των χημικών ιδιοτήτων ενός τροφίμου από τη στιγμή της παραγωγής\nτου, αποτελεί την αλλοίωση του η οποία οδηγεί σε οργανοληπτικές μεταβολές του τροφίμου (χρώμα, υφή). Παράγοντες όπως η φυσιολογική δραστηριότητα των τροφίμων, η ικανότητα ανάπτυξης μικροοργανισμών, το περιβάλλον και η σύσταση των τροφίμων καθορίζουν τον ρυθμό αλλοίωσης του. Στόχος είναι η αυξημένη διάρκεια ζωής των τροφίμων και η διατήρηση της ποιότητάς τους. Λόγω των διάφορων φυσικοχημικών μεταβολών που υφίστανται στα τρόφιμα κατά την αποθήκευσή τους, υποβαθμίζονται τα οργανοληπτικά χαρακτηριστικά των τροφίμων (ποιότητα) τους. Επομένως στην παρακάτω εργασία λαμβάνονται τα μέτρα για την ελάττωση της ταχύτητας εξέλιξης των χημικών και βιοχημικών μεταβολών, με άλλα λόγια διατυπώνονται οι κυριότερες μέθοδοι συντήρησης των τροφίμων, απορρυθμίζονται αναλυτικά, περιγράφονται οι τεχνικές αυτών, καθώς και τα πλεονεκτήματα και μειονεκτήματά τους. Τέλος στο τελευταίο κεφάλαιο περιγράφεται η συσκευασία των τροφίμων ως βασικό τμήμα επεξεργασίας και συντήρησης των τροφίμων.",
