    "description" : "Σκοπός της παρούσας πτυχιακής διατριβής είναι να παρουσιάσει και να αναλύσει την παραγωγή και τα ποιοτικά χαρακτηριστικά τόσο του ελαιόλαδου όσο και των αρωματικών φυτών στην χώρα μας. Αρχικά, θα παρουσιαστεί η ιστορική αναδρομή της ελιάς και του ελαιόλαδου καθώς και κάποιοι ορισμοί. \nΣτη συνέχεια, θα αναλυθούν οι κατηγορίες και οι διάφορες ποιότητες του ελαιολάδου και στην συνέχεια η χημική του σύσταση. \nΗ χημική σύσταση του ελαιολάδου απαρτίζεται από τα σαπωνοποιήσιμα και τα ασαπωνοποιήσιμα χαρακτηριστικά. Τα σημαντικότερα και με αυτά που θα ασχοληθούμε εκτενετέρα αφορούν τα δεύτερα τα οποία είναι: τα λιπαρά οξέα, οι τριακυλογλυκερόλες, οι υδρογονάνθρακες, οι τοκοφερόλες, ορισμένες αλειφατικές και αρωματικές αλκοόλες, οι στερόλες, τα φωσφολιπίδια, τα τριτερπενικά οξέα, οι πολυφαινόλες καθώς και χρωστικές ουσίες.  \nΣτα επόμενα κεφάλαια θα αναλυθούν η ποιοτική αξιολόγηση του ελαιολάδου η οποία αφορά την οξύτητα του, τον βαθμό οξείδωσης καθώς και το χρώμα. Επιπλέον, θα δοθεί μια πλήρης ανάλυση της αντιοξειδωτικής δράσης του ελαιολάδου που αφορά κυρίως τις φαινολικές ενώσεις. \nΤέλος, θα αναλυθεί το δεύτερο σκέλος της παρούσας εργασίας αυτό που αφορά τα αρωματικά φυτά που καλλιεργούνται στον ελλαδικό χώρο καθώς και ο εμπλουτισμός του ελαιολάδου με τα κύρια φυτά από αυτά όπως την ρίγανη, το θυμάρι και το δενδρολίβανο.",
