Με επέκταση της καλλιέργειας των ζαχαροτεύτλων η χώρα μας έγινε αυτάρκης σε ζάχαρη, έτσι δεν πληρώνουμε πια πολύτιμα συνάλλαγμα για την εισαγωγή ζάχαρης από το εξωτερικό. Τα υποπροϊόντα εξάλλου της παραγωγής ζάχαρης χρησιμοποιούνται στην κτηνοτροφία. Στο πρώτο μέρος δίνονται οι εδαφικές και κλιματικές συνθήκες στο νομό Φλώρινας. Ακολουθεί η βοτανική περιγραφή του φυτού, οι οικολογικές απαιτήσεις και οι ποικιλίες που καλλιεργούνται στο νομό Φλώρινας. Στο δεύτερο μέρος περιγράφεται η τεχνική της καλλιέργειας, η λίπανση, η άρδευση, τα ζιζάνια καθώς και οι εχθροί και οι ασθένειες του φυτού.",
