    "description" : "Τα προβλήματα της αλλοίωσης των τροφίμων από τους μικροοργανισμούς και των τροφικών δηλητηριάσεων χρονολογούνται από την πρώτη περίοδο παραγωγής τροφίμων ( πριν από 8.000-10.000 χρόνια). Με τις πρώτες προσπάθειες παραγωγής τροφίμων εμφανίστηκαν και τα προβλήματα που συνδέονται με την  ταχεία αλλοίωση των τροφίμων λόγω ακατάλληλης αποθήκευσης τους η ασθενειών που μεταδίδονται στον άνθρωπο μέσω των τροφίμων.  Ένας από τους κύριους λόγους αλλοίωσης των τροφίμων είναι και οι μύκητες .\nΟι μύκητες είναι ευκαριωτικοί οργανισμοί που ταξινομούνται παραδοσιακά στο φυτικό Βασίλειο οριζόμενοι ως <<κρυπτόγαμα Θαλλόφυτα χωρίς χλωροφύλλη , που τρέφονται από νεκρή η ζωντανή οργανική ύλη >>. Διακρίνονται όμως τόσο από τα φυτά όσο και από τα ζώα λόγω της ιδιαιτερότητας των σωματικών τους δομών και της αναπαραγωγής τους.",
