    "description" : "Η παρούσα εργασία εξετάζει τη παραγωγή της βρώσιμης ελιάς. Γίνεται μια εκτενής ανάλυση στην καλλιέργεια και τυποποίηση της βρώσιμης ελιάς καθώς και στους τρόπους επεξεργασίας της επιτραπέζιας ελιάς. Η Ελλάδα αποτελεί τη δεύτερη μεγαλύτερη παραγωγό χώρα επιτραπέζιων ελιών στην ΕΕ, ενώ το μεγαλύτερο μέρος της εγχώριας παραγωγής εξάγεται, σε χύμα κυρίως μορφή. Αναλύονται οι ασθένειες καθώς και οι τρόποι αντιμετώπισης τους, η τυποποίηση της επιτραπέζιας ελιάς καθώς και οι τρόποι επεξεργασίας των ελιών. Παρουσιάζονται οι τρόποι και οι μέθοδοι διαχείρισης των αποβλήτων της επεξεργασίας των καρπών. Τέλος, παρατίθενται οι προοπτικές ανάπτυξης της επιτραπέζιας ελιάς που είναι θετικές αφού αναμένεται αύξηση της κατανάλωσης σε παγκόσμιο επίπεδο.",
