    "description" : "Η παρούσα μελέτη έχει ως αντικείμενο την παραγωγή κονσερβοποιημένων αλλαντικών, την συντήρηση και τον ποιοτικό έλεγχο αυτών.\nΣτα πλαίσια της μελέτης, δίνεται έμφαση στην επεξεργασία της πρώτης ύλης (κρέας), από την σφαγή του ζώντος ζώου, την ταξινόμηση του σε κατηγορίες και ποιότητες, την συντήρηση του, μέχρι την τεχνολογία παραγωγής των κονσερβών κρέατος και τον ποιοτικό έλεγχο αυτών.\nΚρέας το οποίο έχει όλα εκείνα τα ποιοτικά χαρακτηριστικά (χρώμα, οσμή και γεύση, τρυφερότητα, υφή) αλλά και άλλα φυσικά χαρακτηριστικά όπως εξαιρετική ικανότητα συγκράτησης νερού (ΙΣΥ), ιξώδες και ΡΗ, συμβάλουν μέγιστα στην παραγωγή και κατανάλωση ενός ποιοτικού προϊόντος.\nΣτην συνέχεια, μετά την τυποποίηση του κρέατος και την ποιοτική ταξινόμηση του, ένα μέρος, χρησιμοποιείται για την παραγωγή κονσερβοποιημένων αλλαντικών. Ο τρόπος της επιλογής των δευτερευόντων υλικών,  της επιλογής των υλικών που θα χρησιμοποιηθούν σαν περιέκτες, η διαδικασία της εγκυτίωσης, η όλη παραγωγή και παρασκευή  και η συντήρηση του τελικού προϊόντος έχει μεγάλη σημασία στην κονσερβοποιία.",
