Το επιδόρπιο γιαούρτης παρασκευάζεται από γάλα αγελάδος ξηρό άπαχο και τα τελευταία χρόνια καταλαμβάνει σημαντικό κομμάτι στην αγορά λόγο του χαμηλού κόστος του. Σκοπός αυτής της εργασίας είναι να καταγράψει τις ενέργειες και τα βήματα που ακολουθούνται για την εφαρμογή του συστήματος HACCP  κατά την παραγωγική διαδικασία του επιδόρπιου γιαούρτης. \nο πρώτο κεφάλαιο αναφέρεται στην απόφαση που πάρθηκε το 1997 με βάση την οδηγία 93/43 Ε.Ο.Κ. «για την υγεινή των τροφίμων» ότι κάθε επιχείρηση τροφίμων θα πρέπει να εφαρμόζει το HACCP. Το HACCP  είναι μια προληπτική μέθοδος που επικεντρώνεται στον εντοπισμό και έλεγχο της αιτίας του προβλήματος ασφάλειας των τροφίμων και στην εξάλειψη του. \nΣτο δεύτερο κεφάλαιο γίνεται αναφορά για την υγεινή και ασφάλεια που πρέπει να τηρείται στις βιομηχανικές  εγκαταστάσεις και συγκεκριμένα στους χώρους εργασίας και στο προσωπικό.",
