    "description" : "Η εργασία αυτή αποτελείται κυρίως από δύο μέρη. Στο πρώτο μέρος, γίνεται η παρουσίαση  της εργοστασιακής μονάδας του ΚΑΤΣΕΛΗ Α.Ε.  στην βιομηχανική περιοχή της Θεσσαλονίκης των μηχανημάτων παραγωγής καθώς και τα προϊόντα που παράγονται σε αυτή. Στο δεύτερο και κυριότερο μέρος της εργασίας γίνεται η εφαρμογή του συστήματος Διασφάλισης και Ποιότητας για την Υγεία και την Ασφάλεια του καταναλωτή στα παραγόμενα προϊόντα του εργοστασίου καθώς και στη συνολική παραγωγική διαδικασία. Στο πρώτο κεφάλαιο γίνεται μια ιστορική αναδρομή της εταιρείας του ΚΑΤΣΕΛΗ Α.Ε. περνώντας στη συνέχεια στο δεύτερο κεφάλαιο με τις βιομηχανικές εγκαταστάσεις την παραλαβή και αποθήκευση των πρώτων υλών\nΣτη συνέχεια αναφέρονται οι μικροβιολογικές και φυσικοχημικές αναλύσεις περνώντας στο τέταρτο και πέμπτο κεφάλαιο με τον ποιοτικό έλεγχο των προϊόντων. Στο έκτο κεφάλαιο παρουσιάζονται τα παραγόμενα προϊόντα της εργοστασιακής μονάδας καθώς και τα ιδιαίτερα χαρακτηριστικά τους. Στα επόμενα κεφάλαια περνάμε στο δεύτερο μέρος της πτυχιακής εργασίας με την ανάλυση HACCP και ειδικότερα τα κρίσιμα σημεία ελέγχου τα διαγράμματα ροής την καταγραφή των κινδύνων καθώς και τις διαδικασίες επιβεβαίωσης της εφαρμογής του HACCP. Στο δέκατο τρίτο και τελευταίο κεφάλαιο διεξάγονται τα αποτελέσματα και συμπεράσματα από τη συνολική καταγραφή του συστήματος διασφάλισης και διαχείρισης ποιότητας της βιομηχανίας ΥΙΟΙ Χ. ΚΑΤΣΕΛΗΣ Α.Β.Ε.Ε",
