    "description" : "Στην παρούσα πτυχιακή μελέτη αναλύεται το περιβάλλον μέσα στο οποίο αναμένεται να κινηθεί κατά τα επόμενα χρόνια το ελληνικό ελαιόλαδο, όπως αυτό διαμορφώνεται σε εθνικό, κοινοτικό και διεθνές επίπεδο. Επίσης αναπτύσσονται θέματα που αφορούν τη διαδικασία ελαιοποίησης και τη λειτουργία του ελαιοτριβείου, στη συνέχεια γίνεται διερεύνηση της εφαρμογής του Συστήματος Διαχείρισης της Ασφάλειας του ελαιολάδου σύμφωνα με το διεθνές πρότυπο ISO 22000:2005 σε σύγχρονο διφασικό ελαιοτριβείο της Ελλάδας. Ακολουθώντας τις διεθνείς εξελίξεις στο χώρο των τροφίμων η επιχείρηση παραγωγής ελαιολάδου έχει αναπτύξει και εφαρμόζει σύστημα Διασφάλισης της Ασφάλειας των Τροφίμων (ISO 22000:2005), το οποίο στην ουσία αποτελεί την εξέλιξη των αρχών HACCP (Hazard Analysis and Critical Control Points). Το HACCP αποτελεί μια συστηματική προσέγγιση στην αναγνώριση, αξιολόγηση και έλεγχο των πιθανών κινδύνων που συνδέονται με την αλυσίδα παραγωγής, οι οποίοι είναι κρίσιμοι για την ασφάλεια των τροφίμων. Αναγνωρίζει συγκεκριμένους κινδύνους (μικροβιολογικούς, χημικούς και φυσικούς) και ορίζει προληπτικά μέτρα για τον έλεγχο τους. Σκοπός του ISO 22000:2005 είναι η διασφάλιση της ασφάλειας και της υγιεινής των τροφίμων μέσω συνεχούς παρακολούθησης και ελέγχου όλων των λειτουργιών σε όλα τα στάδια της αλυσίδας του ελαιολάδου.",
