    "description" : "Το ελαιόλαδο, το πυρηνέλαιο και το σησαμέλαιο είναι προϊόντα τα οποία  οξειδώνονται  κατά το μαγείρεμα και το τηγάνισμα ιδιαίτερα όταν οι συνθήκες είναι πολύ δραστικές, δηλαδή η θερμοκρασία και η  διάρκεια μαγειρέματος  είναι υψηλή. Οι αλλοιώσεις που υπόκεινται, επηρεάζουν   την ποιότητα τους και τα οργανοληπτικά  χαρακτηριστικά τους με αποτέλεσμα να είναι επιζήμια , για τον ανθρώπινο  οργανισμό. Η σωστή χρήση τους αποτελεί , πυρήνα ευεξίας και υγείας για τον άνθρωπο και είναι καθημερινή ανάγκη για τη διάσωση , της διατροφικής ποιότητας της ζωής μας.\n\nΣτην εργασία θα μελετηθούν οι αλλοιώσεις που προκαλούνται \nστους  διάφορους,\nτύπους ελαιολάδου   και  σησαμελαίου  μετά  από  βαθύ \nτηγάνισμα. Η  αναφορά στα ιστορικά στοιχεία, στους τύπους και στη σύσταση \nτων παραπάνω τύπων ελαίων, έχει ως σκοπό να βοηθήσει στην κατανόηση του \nπρακτικού  μέρους της εργασίας, έτσι ώστε ο αναγνώστης να σχηματίσει μια \nολοκληρωμένη  άποψη  μέσα  από  τη  στατιστική  μας  μελέτη  και  έρευνα για  το \nβαθμό των αλλοιώσεων,\nπου προκαλείται από την αλόγιστη  και κατ’ επανάληψη \nχρήση των προαναφερόμενων  τύπων ελαίων κατά το τηγάνισμα.\nΗ   καθημερινή   ενασχόληση   με   την   επιτόπια έρευνα   και \n η παρακολούθηση των αλλαγών,\nπου παρουσιάζουν οι διάφοροι τύποι ελαίων μετά \nαπό  την  κατ’    επανάληψη  χρησιμοποίηση  τους  στο  τηγάνισμα,\nκαλύπτει  το \nπρακτικό μέρος της εργασίας, \nόπου με στατιστική μελέτη παρουσιάζονται οι \nαλλαγές  αυτών,\nστο  εργαστηριακό  τμήμα  του  Παραρτήματος  Φλώρινας \n(Ε.Π.Ε.Α.Π) του Τ.Ε.Ι. Δυτικής Μακεδονίας, όπου έλαβε χώρα η έρευνα.\nΕν  κατακλείδι διαπιστώνεται  ότι  οι  αλλοιώσεις  που  υπόκεινται,\nοι \nαναφερόμενοι τύποι ελαίου επηρεάζουν,\nτην ποιότητα τους και τα οργανοληπτικά \nχαρακτηριστικά  τους  με  αποτέλεσμα  να  είναι  επιζήμια,\nγια  τον  ανθρώπινο \nοργανισμό. Η  σωστή  χρήση  τους  αποτελεί,\nπυρήνα  ευεξίας  και  υγείας  για  τον \nάνθρωπο και είναι καθημερινή ανάγκη για τη διάσωση,\nτης διατροφικής ποιότητας \nτης ζωής των ανθρώπων.",
