    "description" : "Μελετήθηκε η ζύμωση του πράσινου ελαιόκαρπου με τη χρήση καλλιέργειας εκκίνης Lactobacillus pentosus. Στη συνέχεια ο καρπός συσκευάστηκε σε εύκαμπτες πλαστικές συσκευασίες με άλμη ή τροποποιημένες ατμόσφαιρες. Τέλος μελετήθηκε η μικροβιακή οικολογία του καρπού με τη βοήθεια ηλεκτρονικού μικροσκόπιου σάρωσης. Παράλληλα, μελετήθηκε η συσκευασία της  ξηραλάτης ελιάς Θάσου σε πλαστικούς περιεκτές με τη χρήση τροποποιημένων ατμόσφαιρων. Ο εμβολιασμός της αλμης με L. Pentosus συνέβαλε στη μείωση του συνολικού χρόνου ζύμωσης καθώς επίσης και του χρόνου επιβίωσης των αλλοιογόνων μικροοργανισμών. Κατά τη συσκευασία του καρπού διαπιστώθηκε ότι η παράμετρος της υφής και του χρώματος του καρπού μπορούν να χρησιμοποιηθούν ως δείκτες ποιότητας που καθορίζουν τη διάρκεια ζωής στο ράφι. Από την μικροσκοπική παρατήρηση των καρπών έδειξε συγκέντρωση γαλακτικών βακτηρίων στα στομάτια και στους υποστομάτιους χώρους του καρπού.",
