    "description" : [ "This doctoral thesis focuses on the development of green and reusable nanobiocatalytic systems (i.e., enzymes immobilized on innovative nanomaterials-nanostructures) and their structural and biochemical characterization. These systems with lipase catalytic activity could be effectively applied to the enzymatic esterification/transesterification of phenolic compounds using different acyl donors. The main scope is the preparation of lipophilic derivatives, known as phenolipids or lipophenols, as new food preservatives with an emphasis on the prolongation of the shelf-life of vegetable oils.", "Η παρούσα διδακτορική διατριβή επικεντρώνεται στην ανάπτυξη πράσινων και επαναχρησιμοποιήσιμων νανοβιοκαταλυτικών συστημάτων (δηλαδή ενζύμων ακινητοποιημένων σε καινοτόμα νανοϋλικά-νανοδομές) και στον δομικό και βιοχημικό τους χαρακτηρισμό. Αυτά τα συστήματα με καταλυτική δραστικότητα λιπάσης θα μπορούσαν να εφαρμοστούν αποτελεσματικά στην ενζυμική εστεροποίηση/μετεστεροποίηση φαινολικών ενώσεων με τη χρήση διαφορετικών άκυλο-δοτών. Το κύριο αντικείμενο είναι η προετοιμασία λιπόφιλων παραγώγων φυσικών αντιοξειδωτικών ως νέα συντηρητικά τροφίμων με έμφαση στην παράταση του χρόνου ζωής των φυτικών ελαίων." ],
