Thirty sheep farms were used (15 of small\n size until 200 sheep and 15 medium and large size up to 200 sheep). During 1st October\n 2019 and 30 September 2020 were taken a cool tank milk specimen once in a month for\n evaluation of milk quality characteristics. All the variables measured, were compared by\n ANOVA system, using the statistical program SPSS. The results of the experiment\n showed that the size of farm didn’t affect the chemical composition and the\n microbiological quality of milk. By contrast, the logarithm of somatic cells count was\n affected from the size of farm. In large farms this number found bigger (P< 0,05). The\n average of microbe content that was found is considering within the directives of E.E.,\n while the somatic cells count was found in high levels. The stage of milking period\n affected the composition, the microbe content and the somatic cells count of milk." }, { "@language" : "el", "@value" : "Στόχος της παρούσας μεταπτυχιακής διατριβής ήταν η διερεύνηση της επίδρασης του μεγέθους της εκμετάλλευσης και του σταδίου της γαλακτικής περιόδου στη χημική σύνθεση του γάλακτος παγολεκάνης, στον αριθμό των σωματικών κυττάρων και στο μικροβιακό φορτίο του γάλακτος. Χρησιμοποιήθηκαν τριάντα προβατοτροφικές εκμεταλλεύσεις (15 μικρού μεγέθους έως 200 ζώα και 15 μεσαίου και μεγάλου μεγέθους 200 ζώα και άνω). Κατά την περίοδο 1 Οκτωβρίου 2019 έως τις 30 Σεπτεμβρίου 2020 λαμβανόταν μία φορά το μήνα δείγματα γάλακτος παγολεκάνης για\n την αξιολόγηση των ποιοτικών χαρακτηριστικών του γάλακτος. Όλες οι μεταβλητές που μετρήθηκαν, επεξεργάστηκαν με την ANOVA, χρησιμοποιώντας το στατιστικό πρόγραμμα SPSS. Τα αποτελέσματα του πειράματος έδειξαν ότι το μέγεθος της εκμετάλλευσης δεν επηρέασε τη χημική σύνθεση και το μικροβιακό φορτίο του γάλακτος. Αντιθέτως, ο λογάριθμος του αριθμού των σωματικών κυττάρων επηρεάστηκε από το μέγεθος της εκμετάλλευσης. Στις εκμεταλλεύσεις με μεγαλύτερο\n μέγεθος ο αριθμός αυτός βρέθηκε μεγαλύτερος (P<0,05).
