Σκοπός της παρούσας εργασίας είναι η εξέταση του στελέχους Lactobacillus kefiri B6 που απομονώθηκε από κόκκους κεφίρ ως προς τις προβιοτικές του ικανότητες. Αρχικά, γίνεται μια εκτεταμένη παρουσίαση του γαστρεντερικού συστήματος, του κεφίρ, των προβιοτικών, πρεβιοτικών και συμβιωτικών. Έπειτα περιγράφονται οι όροι Escherichia coli και listeria monocytogenes. Τέλος, δίνεται το πειραματικό μέρος της έρευνας που έχει σαν σκοπό την εξέταση του στελέχους lactobacillus kefiri B6 και παρατίθενται τα συμπεράσματα τα οποία προέκυψαν από την έρευνα. (EL)
The purpose of this paper is to examine the strain Lactobacillus kefiri B6 isolated from kefir grains in terms of probiotic abilities. Initially, there is an extensive presentation of the gastrointestinal system, kefir, probiotic, prebiotic and symbiotic. After describing the terms Escherichia coli and listeria monocytogenes. Finally, given the experimental part of the research aims to examine the strain lactobacillus kefiri B6 and set out the conclusions which emerged from the study. (EL)
