      "@value" : "Η παρούσα διπλωματική εργασία ασχολείται με τα αλλεργιογόνα συστατικά\nτροφίμων και τους κινδύνους που μπορεί να προκαλέσουν στην υγεία. Μετά από μία\nσύντομη εισαγωγή (κεφάλαιο 1), ακολουθεί το κεφάλαιο 2 στο οποίο αρχικά\nπαρουσιάζονται οι κίνδυνοι των τροφίμων όλων των κατηγοριών που μπορεί να\nυπεισέλθουν σε ένα τρόφιμο, καθώς και η διαδικασία με την οποία ένα συστατικό ή ουσία\nεκτιμάται ως κίνδυνος τροφίμου (Risk management). Έπειτα περιγράφονται οι 7 αρχές του\nσυστήματος υγιεινής και ασφάλειας ΗΑCCP. Το κεφάλαιο αυτό κλείνει με το θέμα της\nΟρθής Βιομηχανικής Πρακτικής (GΜΡ), η οποία περιγράφει ορισμένες προϋποθέσεις που\nβοηθούν στη διατήρηση της υγιεινής μίας βιομηχανίας τροφίμων.\nΤο κεφάλαιο 3 που ακολουθεί αποτελεί μία λεπτομερή παρουσίαση των\nαλλεργιογόνων συστατικών τροφίμων από όλες τις σκοπιές. Αρχικά, δίνεται ο ορισμός των\nτροφικών αλλεργιών και οι κατηγορίες των αλλεργιών στα τρόφιμα. Έπειτα, παρουσιάζονται\nγενικά στατιστικά και επιδημιολογικά στοιχεία όσον αφορά στις τροφικές αλλεργίες, καθώς\nκαι μία συστηματική, εκτενής και εύχρηστη κατηγοριοποίηση των τροφικών αλλεργιογόνων.\nΣτη συνέχεια, δίνονται οι αντιδράσεις /διαταραχές και τα συμπτώματα που μπορεί να\nπροκληθούν από την κατανάλωση τροφίμων με αλλεργικό φορτίο. Αμέσως μετά,\nεπισημαίνεται και παρουσιάζεται η αλλεργική φύση των πρόσθετων συστατικών των\nτροφίμων. Ακολουθούν, ορισμένα θέματα, όσον αφορά στην πρόληψη αλλεργιών, μέσω της\nαποφυγής κατανάλωσης τροφών που περιέχουν αλλεργιογόνα συστατικά, και εν συνεχεία\nπεριγράφονται τα βασικά τρόφιμα που περιέχουν αλλεργιογόνες ουσίες και η σταθερότητά\nτους κατά τις επεξεργασίες στις οποίες υφίστανται σε μία βιομηχανία τροφίμων.\nΤο κεφάλαιο 4 που ακολουθεί αναφέρεται αναφέρεται ενδεικτικά το σύστημα\nHACCP μιας επιχείρησης που εδρεύει στην περιοχή της Ηπείρου. Τέλος, στο κεφάλαιο 5\nαναφέρεται στη νομοθεσία των αλλεργιογόνων τροφίμων, η οποία ασχολείται κυρίως με το\nθέμα των υποχρεώσεων που δημιουργεί η επισήμανση των τροφίμων."
