Σκοπός της άσκησης είναι η μελέτη της διαπερατότητας των κυτταρικών μεμβρανών και του φαινομένου της πλασμόλυσης του φυτικού κυττάρου, δηλαδή της εξόδου νερού από το εσωτερικό του κυττάρου που συμβαίνει όταν το κύτταρο τοποθετείται σε υπερτονικά διαλύματα, προκειμένου να εξισορροπηθεί η οσμωτική πίεση. Αρχικά εξετάζονται οι μηχανισμοί μεταφοράς διαμέσου της κυτταρικής (πλασματική) μεμβράνης μικρομοριακών ουσιών (απλή και διευκολυνόμενη διάχυση, ώσμωση, ενεργός μεταφορά) και μακρομοριακών ουσιών (ενδοκύττωση, εξωκύττωση). Στη συνέχεια περιγράφεται το φαινόμενο της πλασμόλυσης με τη βοήθεια εικόνων και κινούμενων διαγραμμάτων που προσομοιώνουν και εξηγούν τη λειτουργία του φαινομένου. Τέλος, στο πρακτικό μέρος περιγράφεται η πειραματική διαδικασία που ακολουθείται για τον προσδιορισμό του χρόνου πλασμόλυσης και η παρατήρηση-μελέτη των διαφόρων μορφών πλασμόλυσης στο φυτικό κύτταρο. The aim of the exercise is to study the permeability of cell membranes and the phenomenon of plasmolysis of the plant cell, i.e. the exit of water from the interior of the cell that occurs when the cell is placed in hypertonic solutions, in order to balance the osmotic pressure. The mechanisms of transport across the cellular (plasma) membrane of micromolecular substances (simple and facilitated diffusion, osmosis, active transport) and macromolecular substances (endocytosis, exocytosis) are first discussed. The plasmolysis phenomenon is then described with the help of images and animated diagrams that simulate and explain the functioning of the phenomenon. Finally, the practical part describes the experimental procedure followed to determine the plasmolysis time and the observation-study of different forms of plasmolysis in the plant cell. (EN)
